  • French Twist New England Boiled Dinner

    Ingredients

    • 1 lb Head of green cabbage
    • 1 lb Smoked shoulder or possibly butt Pork
    • 4 med potatoes -- peeled
    • 4 lrg carrots -- trim & Scrape
    • 2 x Leeks -- trimmed & well Washe
    • 4 x Ribs celery -- trimmed and Tied
    • 1 x Onion*
    • 2 whl cloves
    • 2 tsp Allspice
    • 2 sprg fresh thyme
    • 1 tsp Dry thyme
    • 1 x Bay leaf
    • 6 x Peppercorns Salt to taste
    • 4 x Chicken legs and thighs Or possibly

    Directions

    1. *Peel onion but leave stem on, press cloves into onion. Remove and throw away any tough outer leaves on the cabbage, quarter and remove the core. In large kettle, combine the pork butt, potatoes, cabbage, carrots, leeks, celery, onion, allspice, thyme, bay leaf, and peppercorns. Cover with water, add in salt to taste. Cover, bring to a boil, reduce heat and simmer for 20 min. Add in the chicken and simmer for 15 min more.
    2. author: "In my recipe, smoked shoulder or possibly butt of pork is combined with winter vegetables and chicken. The smoked pork is already cooked, that greatly reduces boiling time. The chicken legs and thighs go in last because they cook quickly. Serve guests a little of each ingredient along with Dijon-style mustard, grated horseradish and cornichons. A mixed green salad is all you need on the side."
