    Frango à Brás - Chicken with potato sticks

    This is a typical Portuguese recipe inspired by another (Bacalhau à Brás) I grew up with. Our family does not care much for chicken breast. We all go for the dark meat. So this is the perfect recipe to finish up that white meat no-one will eat. Another benefit is that the chicken breast of just on chicken will feed 4 to 5 people!

    Ingredients

    • 1 tbsp of olive oil
    • Chicken Breast left over - all shredded into small pieces
    • 6 eggs
    • 1 medium onion cut in finely slices
    • 3 cup of potato sticks
    • salt and pepper to taste

    Directions

    1.
    Warm the olive oil in a skillet
    2.
    Sautee the sliced onions until golden
    3.
    # Add the chicken and turn it a few times mixing it well with the onions
    4.
    Beat the eggs (you can add a little milk if desired)
    5.
    Add the potato sticks onto the skillet
    6.
    Add the eggs and remove from heat
    7.
    Mix well with a wooden spatula until well cooked

      Well John, if you actually have the time and patience to cut the potatoes into very thin strips, deep fry them, then once cold but crispy use them, be my guest. It certainly will be much better. But if not, I am indeed referring tho the shoestring potato sticks you buy as a snack. What I love about this recipe is that out of the chicken breast of one chicken you can easily feed 4 to 5 people and it is so very tasty. The actual recipe for the "à Brás" is with salt dry cod fish and the process is the exact same one.

        This looks tasty Sofia. Thanks for adding! By potato sticks, are you referring to shoestring potatoes (like potato chips but in stick form), or are you referring to a raw potato cut into thin strips?

          Hello John and sorry for the late response. You can actually use both. Up to you. I prefer to do my own, but when in a rush I will get the shoestring ones at the store
