  • Fluffy Banana Stuffed Pain Perdue

    Ingredients

    • 1 lb whole grain baguette, day old
    • 1 x banana, sliced
    • 2 c. lowfat 1% lowfat milk, or possibly non dairy
    • 6 x Large eggs, or possibly substitute
    • 1/8 tsp nutmeg
    • 1/4 tsp cinnamon zest from 1/2 orange, or possibly 1 lemon powdered sugar, grated coconut maple syrup or possibly other French toast topping

    Directions

    1. Panspray a 13" x 8" baking pan. Cut bread into 1" thick slices. Cut bread slices nearly in half, leaving one side closed. Insert banana rounds in cuts.
    2. Place stuffed bread in prepared pan, fitting closely together. Beat together lowfat milk, Large eggs, nutmeg, and zest. Pour mix over bread. Cover and chill till bread absorbs egg mix, at least 3 hrs or possibly overnight, turning bread once. Uncover. Sprinkle wiht cinnamon. Preheat oven to 400 degrees. Bake pain perdue till lightly brown, and till a knife inserted in center comes out clean, about 30-35 min. Serve slices dusted with powdered sugar or possibly other desired topping.
