  • Bananas Foster Pain Perdu

    Ingredients

    • 1/4 lb Butter, plus 2 Tbsp.
    • 1 c. Pecan pcs
    • 2 c. Maple syrup
    • 1/4 c. Rum
    • 3 x Large eggs
    • 3/4 c. Lowfat milk
    • 1 Tbsp. Grated orange zest
    • 1/4 c. Fresh orange juice
    • 2 Tbsp. Sugar
    • 1/4 tsp Cinnamon
    • 1/4 tsp Vanilla extract
    • 8 slc French bread, about 1 inch thick
    • 2 x Bananas, peeled and sliced 1/4 inch thick Powdered sugar for dusting

    Directions

    1. 1. In a saute/fry pan, heat 2 Tbsp. of the butter.
    2. 2. Add in the pecans and saute/fry for 4-5 min, stirring constantly.
    3. 3. Stir in the maple syrup and bring the liquid up to a simmer.
    4. 4. Remove the pan from the stove and add in the rum. Carefully place the pan back on the stove and flame the sauce. Remove the sauce from the heat and set aside.
    5. 5. In a mixing bowl, whisk the Large eggs, lowfat milk, orange zest, orange juice, sugar, cinnamon, and vanilla, to dissolve the sugar. In a nonstick saute/fry pan, heat 2 Tbsp. of butter. Dip 2 slices of the bread into the egg-lowfat milk mix, coating proportionately. Fry in the butter till golden, 2-3 min on each side. Repeat till all the butter and bread is used.
    6. 6. Lay the pain perdu on a platter. Add in the bananas to the pecan mix and hot slightly. Spoon the hot sauce over the pain perdu. Dust the entire plate with powdered sugar.
    7. Toast
