Fluffy Baked Eggs And Bacon
Ingredients
- 1/2 lb Sliced bacon, cut into 1" pcs
- 1/2 c. Minced onion
- 3 x Large eggs
- 1 1/4 c. Lowfat milk
- 1/2 c. Buttermilk biscuit mix
- 1/4 tsp Salt
- 1/8 tsp Pepper
- 1/2 c. Shredded cheddar cheese
Directions
- In a skillet, cook bacon till almost crisp; add in onion. Cook, stirring frequently, till bacon is crisp and onion is tender. Drain. Transfer to a 1-1/2-quart. casserole. In a mixing bowl, beat Large eggs, lowfat milk, biscuit mix, salt and pepper till almost smooth. Slowly pour over bacon and onion. Bake, uncovered, at 375 for 30 min or possibly till a knife inserted near the center comes out clean. Sprinkle with cheese; let stand 5 min before cutting.
