Florentine Feta Stuffed Mushrooms
Ingredients
- 2 Tbsp. extra virgin olive oil
- 1/4 tsp garlic, minced
- 3 Tbsp. Spanish onions, minced
- 3 Tbsp. red bell peppers, minced
- 1 c. minced fresh spinach, packed Salt and freshly grnd black pepper, to taste
- 2 Tbsp. cottage cheese
- 2 Tbsp. feta cheese, crumbled
- 1/2 c. fresh breadcrumbs
- 12 lrg fresh mushroom caps Splash white wine
- 1 Tbsp. clarified butter
- 1/4 c. walnuts, minced
Directions
- Preheat oven to 400 F. In a medium-sized skillet, heat the oil and saute/fry the garlic, onions, and bell peppers for 3 to 5 min, or possibly till the onions are translucent/soft. Add in the spinach and continue to saute/fry. Stir in the salt, black pepper, and both cheeses. Add in the bread crumbs and mix well to combine.
- Stuff each mushroom cap with the mix and place the stuffed mushrooms in a baking pan. Splash with the wine and drizzle on the butter.
- Top with the walnuts and bake for 8 to 10 min. Serve immediately.
- Makes 12 mushrooms.
