  • Florentine Feta Stuffed Mushrooms

    Ingredients

    • 2 Tbsp. extra virgin olive oil
    • 1/4 tsp garlic, minced
    • 3 Tbsp. Spanish onions, minced
    • 3 Tbsp. red bell peppers, minced
    • 1 c. minced fresh spinach, packed Salt and freshly grnd black pepper, to taste
    • 2 Tbsp. cottage cheese
    • 2 Tbsp. feta cheese, crumbled
    • 1/2 c. fresh breadcrumbs
    • 12 lrg fresh mushroom caps Splash white wine
    • 1 Tbsp. clarified butter
    • 1/4 c. walnuts, minced

    Directions

    1. Preheat oven to 400 F. In a medium-sized skillet, heat the oil and saute/fry the garlic, onions, and bell peppers for 3 to 5 min, or possibly till the onions are translucent/soft. Add in the spinach and continue to saute/fry. Stir in the salt, black pepper, and both cheeses. Add in the bread crumbs and mix well to combine.
    2. Stuff each mushroom cap with the mix and place the stuffed mushrooms in a baking pan. Splash with the wine and drizzle on the butter.
    3. Top with the walnuts and bake for 8 to 10 min. Serve immediately.
    4. Makes 12 mushrooms.
