- I-LB BLACK EYED PEAS(SOAKED OVER NIGHT) 4 CUPS WATER ,1 CHIX BOUILLION CUBE, 1 SMALL ONION QUARTERED, 2 HOT PEPPERS PODS,(OR 1 TSP CRUSHED
- RED PEPPER FLAKES, 3 CLOVES OF GARLIC MINCED
- 1/2 TSP DRIED THYME CRUSHED, 1TBSP VEGETABLE OIL
- SALT TO TASTE, (OPTIONAL) 3 TO 4 TURKEY NECKS
Directions
- DRAIN THE PEAS, PUT THE PEAS IN A POT COVER WITH THE WATER BRING TO A BOIL,AND LET STAND FOR I HOUR, DO THIS IF U DON'T WANT TO SOAK THE PEAS OVERNIGHT. COMBINE, PEAS, WATER, BOUILLION CUBE,ONION, PEPPER PODS, OR THE HOT PEPPER FLAKES, GARLIC,THYME,VEGETABLE OIL, AND SALT IN A DUTCH OVEN OR A LARGE SAUCE PAN, BRING TO A BOIL, REDUCE THE
- HEAT AND COVER AND SIMMER GENTLY FOR I HOUR UNTIL
- TENDER, ADD ADDITIONAL WATER IF THE PEAS MIXTURE
- BECOMES TO THICK. THE TURKEY NECKS I BOIL IN A SEPARATE POT AND 1 CUP WATER I ADD I/4 CUP DICED ONIONS, HOT PEPPER FLAKES 1TSP, AND LAWERY'S SEASONED SALT APPROXIMATELY ABOUT 1/2 TBSP FULL AND LET THIS COOK UNTIL TENDER, THEN I TAKE IT OFF THE BONES AND ADD IT TO THE COOKED PEAS
