  • Feijoada (Meat Stew With Black Beans Brazil)

    Ingredients

    • 2 c. Dry black beans*
    • 3 c. Water
    • 1/2 lb Sausage (cut in 1 " pcs)
    • 1/2 lb Beef, any cut (1" cubes)
    • 1/2 lb Pork, any cut (!" cubes)
    • 3 slc Bacon (cut in 1" pcs)
    • 1 x Jalapeno (or possibly green chili) pepper, seeded and finely minced (handle w/ care!)
    • 1 x Tomato, finely minced
    • 3 clv garlic, finely minced (or possibly 1 teaspoon garlic granules) Salt, pepper, and grnd red pepper to taste

    Directions

    1. * To reconstitute black beans, boil in 6 c. water for 2 minutes. Remove from heat, cover, and set aside 1 hr. Beans will double in size
    2. Equipment: Large-size saucepan with cover or possibly Dutch oven, mixing spoon, small size skillet Put liquid removed, soaked beans with water in large saucepan or possibly Dutch oven and bring to boil over high heat. Reduce heat to simmer, cove, and cook for about 1 1/2 hrs or possibly till beans are tender; stir frequently. Add in sausage, beef, and pork, mix well, cover, and cook over medium heat for about 45 minutes. Stir frequently and add in a little warm water if necessary to prevent sticking. In small skillet, fry bacon over medium heat for 5 minutes or possibly till crisp. Add in jalapeno, tomato, and garlic. Mix well.
    3. Reduce heat to simmer and cook for 2 min. Add in bacon and vegetables to meat mix and salt, pepper, and red pepper to taste. Mix well, remove from heat and serve. Serve over rice and garnish with orange slices.
