    No, not just my favorite oatmeal muffin, these are actually my Number 1 Favorite Muffin ~ period! I love that they are comparatively low-fat and won’t make your fingers greasy as you eat them. I love the chewy texture of oatmeal, the sweetness of raisins and cinnamon, and the spongy texture buttermilk imparts to baked products. I love that they have extra fiber from whole grains, applesauce and raisins. Not fancy and not rich. Just a simple, everyday quick bread ~ but my stand-by muffin recipe.

    Ingredients

    • 1 1/4 cups flour (a combination of AP and white whole wheat works well)
    • 1 cup oatmeal
    • 1/2 cup brown sugar
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon cinnamon
    • 1/4 teaspoon salt
    • 3/4 cup buttermilk
    • 1/4 cup applesauce
    • 1/4 cup canola oil
    • 1 egg, beaten
    • 1/4 cup raisins (golden are favorites, but any work well including dried cranberries)

    Directions

    1. Preheat oven to 400 degrees F. Grease a 12-cup muffin pan or use paper liners.
    2. In large bowl stir together flour, oats, brown sugar, baking powder, baking soda, cinnamon and salt. In separate smaller beat egg; then beat in buttermilk, applesauce and oil. Stir in raisins.
    3. Add liquid ingredients to dry all at once and stir just until moistened.
    4. Divide evenly among muffin cups. Bake 15-18 minutes or until golden brown.
    5. Remove from oven. Allow to stand 2 minutes and then remove from pan onto cooling rack.

        This recipe sounds really good. I bake with whole wheat flour whenever possible. I'll try this. But I want to suggest Walmart's Great Value low-sugar brown sugar rather than Splenda (which does contain real brown sugar also). You only use 1/2 of the amount the recipe calls for instead of the same amount with Splenda and believe me, it's enough! That's half the real brown sugar.

          Thanks for your comments and I also bake with WW flour whenever possible. Great Value Brown Sugar Blend is identical to Splenda Brown Sugar Blend in ingredients, which are word-for-word the same. The directions to use are identical - each product maintains a 1 lb bag sweetens like 2 lbs of sugar would. And each bag contains a conversion chart showing 1/2 as much used in place of the recipe's full amount of sugar. Of course anyone can limit the amount of regular brown sugar or sugar in many recipes without problems.
