  • Fast French Onion Soup

    Ingredients

    • 1 Tbsp. Extra virgin olive oil
    • 3 med Onions, (1 and 1/2 pounds) Peeled and thinly sliced
    • 1/4 tsp Sugar
    • 1 Tbsp. Flour
    • 4 c. Warm beef broth
    • 2 Tbsp. Dry vermouth
    • 1 tsp Cayenne pepper Freshly grnd black pepper
    • 4 1/2 x Thick slices French bread Butter
    • 4 ounce Gruyere cheese, shredded
    • 1 x Clove chopped garlic
    • 1/4 c. Finely chopped parsley

    Directions

    1. In medium saucepan, saute/fry onions and sugar in oil till onions are tender.
    2. Stir in flour. Mix well. Add in warm broth, vermouth, cayenne and black pepper.
    3. Stir. Cook till warm. While cooking, cut French bread. Spread with butter on each side and brown on griddle. After flipping for the last time, sprinkle cheese and garlic on top of bread. Heat under broiler. In serving bowls, divide onion mix. Place toast in the bottom of serving bowls.
    4. Pour soup over all. Serve warm with parsley.
    5. Approximately 15 min.
