  • Fantastic Stuffed Italian Bread

    There are many variations of stuffed bread, but in our home, as I was growing up, my mother excelled in baking stuffed bread. Sometimes she used vegetables and sometime a variety of cheese and meat . Mostly it was served with sauce on top, but sometimes we had it as a main course. Do not be afraid to try many things in stuffed bread.

    Ingredients

    • 1 loaf of Italian bread not sliced
    • 1 lb. ground beef
    • 1/2 cup peppers, chopped
    • 1/2 cup onions, chopped
    • 1 rib celery , chopped
    • 1 cup well drained spinach
    • 1 tomato, chopped
    • 1/4 cup black olives, diced
    • 1/2 cup provolone cheese, chopped
    • 1 egg
    • 1/2 tsp. Italian seasoning
    • Salt and pepper to taste

    Directions

    1. 1. Cut a thin slice on top of bread. Hollow out the loaf. Dice the inside bread. Set aside
    2. 2. Cook beef, drain. Save half of oil.
    3. 3. In the oil, saute the onions, green pepper, tomato, celery and spinach.
    4. 4. In a bowl, combine the sauteed vegetables with the beef; add Italian seasoning; stir in the bread, olives, cheese and egg.
    5. 5. Spoon all into the bread shell. Replace top. Wrap tightly in foil.
    6. 6. Bake at 400 degrees for 20-25 minutes. Remove, cut into slices and serve. It is a treat with gravy on top or spaghetti sauce.
