    I don't know about you, but I look forward to Family time with my husband, children and grandchildren. We love those good Sunday dinners and this is one of them. A Pot roast dinner is very economical, very delicious and very filling. You can serve it with a large green salad or greens beans and deviled eggs. I have 4 grown children, (2 of which are men), 2 daughter-in-laws and 5 grandbabies. This hearty meal is just what you need for a large family. I hope you enjoy it!

    Ingredients

    • • 2 (3 to 4 lb) Beef Chuck Roasts
    • • Garlic & Onion Powders, Kosher Salt & Black Pepper
    • • 2 Bell Peppers, sliced
    • • 3-4 Onions, sliced
    • • 4 Garlic Cloves, minced
    • • 2-4 cups water
    • • 4 Celery Stalks, chopped
    • • 1 Lg bag of Baby Carrots
    • • 1 pkg Beefy Onion Soup Mix
    • • 4 bay leaves
    • • 4 Sprigs of Fresh Thyme
    • • 6 Tbsp Olive Oil
    • Flour
    • 8 medium size Potatoes, diced

    Directions

    1. Season both sides of the meat with garlic and onion powders, salt and pepper.
    2. Coat both sides of meat with flour
    3. Heat 3 Tbsp olive oil in a skillet, brown roast on both sides and remove to place in a roasting pan. (Repeat steps 1-3 if you have 2 roasts).
    4. Put a small amount of seasoned flour around roast at the bottom of pan to make gravy. (4-6 Tbsp)
    5. Garnish roasts with all ingredients except carrots and potatoes. Season again with garlic and onion powders, salt and pepper, adding Ms. Dash if you have it and 4 beef boullion cubes if you want a heightened beefy flavor.
    6. Make sure there's enough water to just cover vegetables. Stir to blend flour and seasonings well.
    7. Cover and place in oven at 350 degrees for 2.5 hrs. Add diced potatoes and carrots and cook another 1- 1.5 hrs or until fork tender.
    8. Remove and slice roast arranging it on a platter, garnished with the carrots, potatoes and vegetables.
    9. Serve with pot roast gravy.
