Chuck Roast Over Coals
Ingredients
- Chuck roast 1-1/2 inch thick
- 1 tsp Salt
- 3 Tbsp. Flour
- 1 dsh Pepper
- 1/3 tsp Dry mustard
- 3/4 c. Catsup
- 1 1/2 Tbsp. Worcestershire sauce
- 1 Tbsp. Vinegar
- 1 med Onion
- 2 stalk celery
- 2 x Carrots, sliced
- 1 Tbsp. Brown sugar
Directions
- Brown roast 20 min on each side over coals. Season with salt & pepper.
- Mix remaining ingredients; put half of sauce on large sheet of foil, top with meat, then rest of sauce. Fold foil & secure. Bake over slow coals 1-1/2 hrs. Use extra foil on coals.
