Fall Vegetable Casserole
This is a great way to add all your favorite vegetables into one delicious dish....quick, easy and something everyone will love! Ingredients
- Two bunches asparagus
- One lb fresh string beans
- One butternut squash
- Four green zucchini
- Two yellow zucchini
- Two large green peppers
- Two large red peppers
- One medium size box fresh mushrooms
- One dozen small fresh carrots
- Eight small red or white or as combination. Of both, potatoes
- Six cloves garlic
- Some fresh basil
- Sprinkle of oregano, to your taste
- Sprinkle of crushed hkt red pepper flakes, to your taste
Directions
- Clean and cut into medium sized pieces
- Leave asparagus whole
- Cut garlic in half
- Put a little oil on the bottom of a deep oven pan and mix all vegetables and seasonings together
- Put a little more oil on top and toss again.
- Bake at 350 degrees, covered for forty minutes
- Remove cover and continue to bake until tender.
- As an option, you can add some balsamic vinegar once plated.
