  • Fall Vegetable Casserole

    This is a great way to add all your favorite vegetables into one delicious dish....quick, easy and something everyone will love!

    Ingredients

    • Two bunches asparagus
    • One lb fresh string beans
    • One butternut squash
    • Four green zucchini
    • Two yellow zucchini
    • Two large green peppers
    • Two large red peppers
    • One medium size box fresh mushrooms
    • One dozen small fresh carrots
    • Eight small red or white or as combination. Of both, potatoes
    • Six cloves garlic
    • Some fresh basil
    • Sprinkle of oregano, to your taste
    • Sprinkle of crushed hkt red pepper flakes, to your taste

    Directions

    1. Clean and cut into medium sized pieces
    2. Leave asparagus whole
    3. Cut garlic in half
    4. Put a little oil on the bottom of a deep oven pan and mix all vegetables and seasonings together
    5. Put a little more oil on top and toss again.
    6. Bake at 350 degrees, covered for forty minutes
    7. Remove cover and continue to bake until tender.
    8. As an option, you can add some balsamic vinegar once plated.
