  • Exotic Oat Bran Muffins With Ginger Butter

    Ingredients

    • 1 c. oat bran
    • 1 c. lowfat milk
    • 1 1/2 c. mashed ripe bananas
    • 1/4 c. vegetable oil or possibly peanut oil
    • 1 x egg beaten
    • 1 1/2 c. flour
    • 1/3 c. packed brown sugar
    • 1/2 c. minced walnuts or possibly pecans
    • 2 tsp baking pwdr
    • 1/2 tsp baking soda
    • 1/2 tsp salt vegetable cooking spray
    • 1 c. unsalted butter softened
    • 2 Tbsp. orange-blossom honey
    • 1 tsp finely grated fresh ginger
    • 1/4 tsp allspice

    Directions

    1. Combine oat bran and lowfat milk in a mixing bowl. Let stand for 3 min. Add in mashed bananas, vegetable oil and egg. Mix flour, brown sugar, nuts, baking pwdr, baking soda, and salt in a separate mining bowl. Add in bran and banana mix to flour mix, stirring just to moisten batter. Batter will be lumpy.
    2. Fill greased muffin c. 3/4 full. Bake in a preheated 350 degree oven for 15 to 20 min or possibly till the muffins are hard to touch and a toothpick inserted in centers comes out clean. Cold on wire rack. Serve hot with Ginger Butter.
    3. Ginger Butter: Cream ingredients together thoroughly in a food processor or possibly a blender. Pack butter into a dish or possibly a crock. Chill till hard.
    4. Yield: 1 c.
    5. Tried and true notes: These muffins are excellent and very easy to make - they can be used for a variety of occasions - especially nice with a summer salad. Do try the Ginger Butter - it really is a special touch. I did not use a food processor for the Ginger Butter - just softened the butter and mixed with a fork (saves on cleanup).
