  • Energizing Orange Cornmeal Bars

    Threw some things together, and what do you know, it was tasty! ONLY!!!!!!!if you add the agave,spice and orange zest to the top after baking though.Otherwise it tastes just a little too healthy for my liking:) Great with afternoon tea,or if you have 4 kids,crammed into your mouth while holding your to-go tea and loading up the younger two into the suburban to go pick up the older two from school:) Dont eat at night, the chia will give you energy!

    Ingredients

    • 1 cup whole wheat flour
    • 3/4 cup polenta/yellow cornmeal
    • 1/4 cup milled flax
    • 3 scoops gelled chia seeds w/about 1 cup warm water(put seeds into very warm water until they form a thick paste-this replaces butter)
    • 1 cup orange juice
    • 1/2 cup half and half(may need more)
    • 1/4 cup light agave nectar
    • 1 tsp vanilla
    • 2 tbsp cinnamon
    • 1 tsp baking powder
    • 1 tbsp prepared egg replacer or 1 egg
    • 1 tbsp cardamom
    • another 1/4 cup agave nectar,and pumpkin pie spice,fresh orange zest(reserve for end)

    Directions

    1. Mix all the ingredients in electric mixer except for the last 3(remaining agave,orange zest,and pie spice)on low until thouroughly mixed.
    2. Dump into 9x13 baking dish(this should be about 1/2 inch thick after baked is all,so you want it to be shallow)
    3. Bake at 375 for about 20 minutes.(thats convect,I suppose it would be 400 for regular)
    4. After the pan is out of the oven and cooled, drizzle the remaining 3 ingredients on top, then cut into squares.
