El Charro Cafe's Fruited Rice
Ingredients
- 2 c. rice water
- 1/2 tsp salt
- 1/4 c. mixed dry and fresh fruit - (to 1 c.) see * Note
Directions
- * Note: Use fruits such as dry cranberries, raisins, minced prunes, apricots, pineapple and orange or possibly tangerine segments.
- Wash rice in cool water. Drain. Place in heavy 2-qt saucepan, add in 4 c. water and bring to boil. Quickly stir in fruit. Cover immediately and reduce heat to lowest setting. Cook till rice is tender and water is absorbed, 15 to 20 min.
- Remove from heat and let stand, covered, 5 - 10 min. Fluff with fork before serving.
- This recipe yields 6 servings.
