  • Eggs And Canadian Bacon Quiche

    Ingredients

    • Vegetable cooking spray as needed
    • 10 ounce Canadian bacon sliced
    • 8 x Large eggs beaten
    • 1/3 c. mayonnaise
    • 1/2 c. grated Parmesan cheese
    • 1/2 tsp freshly-grnd white pepper
    • 4 ounce Monterey Jack cheese
    • 1/4 c. mayonnaise
    • 1/4 tsp oregano
    • 1/4 tsp paprika
    • 1/2 tsp minced parsley

    Directions

    1. Preheat oven to 350 degrees.
    2. Coat a 9-inch deep-dish pie plate or possibly quiche pan with vegetable cooking spray. Line the bottom and sides with sliced Canadian bacon.
    3. In a medium bowl combine beaten Large eggs, 1/3 c. mayonnaise, grated Parmesan cheese, and white pepper. Pour over the bacon and bake for 25 min, or possibly till the Large eggs are almost set.
    4. In a saucepan combine Monterey Jack cheese, 1/4 c. mayonnaise, oregano, paprika, and parsley. Heat till melted and pour over the almost cooked Large eggs, return to the oven and bake 5 more min.
    5. This recipe yields 6 servings.
