Eggs And Canadian Bacon Quiche
Ingredients
- Vegetable cooking spray as needed
- 10 ounce Canadian bacon sliced
- 8 x Large eggs beaten
- 1/3 c. mayonnaise
- 1/2 c. grated Parmesan cheese
- 1/2 tsp freshly-grnd white pepper
- 4 ounce Monterey Jack cheese
- 1/4 c. mayonnaise
- 1/4 tsp oregano
- 1/4 tsp paprika
- 1/2 tsp minced parsley
Directions
- Preheat oven to 350 degrees.
- Coat a 9-inch deep-dish pie plate or possibly quiche pan with vegetable cooking spray. Line the bottom and sides with sliced Canadian bacon.
- In a medium bowl combine beaten Large eggs, 1/3 c. mayonnaise, grated Parmesan cheese, and white pepper. Pour over the bacon and bake for 25 min, or possibly till the Large eggs are almost set.
- In a saucepan combine Monterey Jack cheese, 1/4 c. mayonnaise, oregano, paprika, and parsley. Heat till melted and pour over the almost cooked Large eggs, return to the oven and bake 5 more min.
- This recipe yields 6 servings.
