Eggplant BLT on Ciabatta
Perfect sandwich for lunch time any day! Ingredients
- One large eggplant
- Olive Oil
- S & P
- Garlic powder
- One loaf Ciabatta bread
- 2 large ripe tomatoes
- 8 leaves Lettuce
- scant 1/4 cup mayonnaise
- 16 slices crispy cooked bacon
- Optional sliced Mozzarella Cheese
Directions
- Rinse and dry Eggplant, slice thick
- Place each slice on a non stick rimmed baking sheet pan, drizzle with olive oil, s & p and garlic powder, bake @400 F until golden brown
- Slice open Ciabatta bread
- Assemble sandwich, eggplant, lettuce, mayo, tomato, bacon, optional cheese
- Cut into pieces and serve
