Eggplant BLT on Ciabatta

Ingredients

  • One large eggplant
  • Olive Oil
  • S & P
  • Garlic powder
  • One loaf Ciabatta bread
  • 2 large ripe tomatoes
  • 8 leaves Lettuce
  • scant 1/4 cup mayonnaise
  • 16 slices crispy cooked bacon
  • Optional sliced Mozzarella Cheese

Directions

  1. Rinse and dry Eggplant, slice thick
  2. Place each slice on a non stick rimmed baking sheet pan, drizzle with olive oil, s & p and garlic powder, bake @400 F until golden brown
  3. Slice open Ciabatta bread
  4. Assemble sandwich, eggplant, lettuce, mayo, tomato, bacon, optional cheese
  5. Cut into pieces and serve
