  • Egg Noodles With Sweet And Spicy Beef Sauce

    Ingredients

    • 2 Tbsp. Canola oil
    • 3 x Thai bird chiles chopped
    • 1/4 c. Chopped garlic
    • 1 Tbsp. Chopped ginger
    • 1 Tbsp. Fermented black beans
    • 1 x Red onion fined diced
    • 2/3 c. Hoisin
    • 1 lb Grnd beef
    • 1/2 c. Shaohsing (Chinese white wine) Salt to taste Freshly-grnd black pepper to taste
    • 1 x Cucumber peeled, julienned
    • 2 x Carrots julienned
    • 2 c. Bean sprouts

    Directions

    1. In a warm saucepan, add in canola oil and caramelize chiles, garlic, ginger, beans and onions. Add in hoisin, stir often and cook for 2 min. Add in beef and deglaze with shaohsing. Turn heat down and simmer for 45 min. Check for seasoning.
    2. Cook noodles in salted water till al dente. Drain well and place in bowls. Top with cucumber, carrots and bean sprouts. Ladle on warm beef sauce.
    3. This recipe yields 4 servings.
