Egg Noodles With Sweet And Spicy Beef Sauce
Ingredients
- 2 Tbsp. Canola oil
- 3 x Thai bird chiles chopped
- 1/4 c. Chopped garlic
- 1 Tbsp. Chopped ginger
- 1 Tbsp. Fermented black beans
- 1 x Red onion fined diced
- 2/3 c. Hoisin
- 1 lb Grnd beef
- 1/2 c. Shaohsing (Chinese white wine) Salt to taste Freshly-grnd black pepper to taste
- 1 x Cucumber peeled, julienned
- 2 x Carrots julienned
- 2 c. Bean sprouts
Directions
- In a warm saucepan, add in canola oil and caramelize chiles, garlic, ginger, beans and onions. Add in hoisin, stir often and cook for 2 min. Add in beef and deglaze with shaohsing. Turn heat down and simmer for 45 min. Check for seasoning.
- Cook noodles in salted water till al dente. Drain well and place in bowls. Top with cucumber, carrots and bean sprouts. Ladle on warm beef sauce.
- This recipe yields 4 servings.
