Edamame/Chickpea Guacamole
Packed with good-for-you foods this dis is outstanding in sandwiches, salads or a standalone snack! Please eat your veggies! Ingredients
- 1 cup frozen shelled edamame thawed or 1 can no salt chickpeas
- 1 small ripe avocado
- ½ cup of cubed tomatoes
- ½ bunch of cilantro (optional)
- ¼ white onion, chopped
- 1/3 cup of lime juice
- 2-3 tablespoons of water
- Season to taste with salt & black pepper or Adobo seasoning (optional)
Directions
- In a blender or food processor add edamame/chickpeas, avocado, tomatoes, cilantro, onion and lime juice until almost smooth.
- Add water enough to create a creamy consistency and blend again briefly to texture.
- Chill before serving.
