Easy Tropical Bananas
Ingredients
- 1 1/2 c. angel food cake cubes
- 1 Tbsp. light butter
- 2 Tbsp. dark brown sugar
- 2 c. pineapple juice
- 3 Tbsp. dark rum
- 1 tsp vanilla extract
- 1/4 tsp grnd cinnamon
- 2 x bananas each cut 8 pcs
- 6 x macadamia nuts toasted, minced Nonfat vanilla frzn yogurt (optional)
Directions
- Bake cake cubes in an 11- by 7-inch pan at 350 degrees for 5 min or possibly till lightly toasted. Set aside.
- Heat butter in a large nonstick skillet over medium-high heat; add in sugar, and cook, stirring often, 5 min. Stir in juice and rum; cook 3 min. Stir in vanilla and cinnamon. Add in banana, and cook 3 min.
- Arrange cake on individual plates. Spoon banana mix over cake; drizzle with any remaining sauce, and sprinkle with nuts. Serve hot with frzn yogurt, if you like.
- This recipe yields 2 servings.
