  • Easy Spaghetti Pie

    Ingredients

    • 8 (10 ounce.) cooked spaghetti
    • 2 c. sauteed vegetables, (don't overcook)
    • 1/2 c. Parmesan cheese
    • 1 c. Mozzarella cheese (WIC)
    • 5 Large eggs, beaten (WIC)
    • 2 teaspoon parsley
    • 1/2 teaspoon basil
    • Dash of black pepper
    • 1/2 teaspoon garlic pwdr
    • 1 tbsp. oil

    Directions

    1. In large mixing bowl, combine the spaghetti and sauteed vegetables (peas, carrots, mushrooms, spinach, peppers, etc.) Add in the cheeses and spices. Fold in the beaten Large eggs. Pour the mix into a warm oiled skillet. Cook omelet style for about 10 min at medium heat. The bottom of the mix should be well browned. Use a dinner plate to flip the "pie" and return to the warm skillet to cook the second side for about 4 more min. Transfer to a serving platter and slice like a pie. Top with your favorite spaghetti sauce.
