  • Easy Sauteed Squash for Two

    This is such an easy, yet very tasty squash and onion recipe. There are very few ingredients and it doesn't take much cooking time which allows it to be fixed as a last minute side dish. That's exactly what happened when I came up with this totally simple recipe!

    Ingredients

    • 5 medium size yellow or crookneck squash
    • 1/2 large yellow onion
    • 1 Tbsp. vegetable oil
    • 1 Tbsp. butter
    • 1/8 tsp. garlic powder
    • 1/8 tsp. kosher salt
    • Fresh ground pepper to taste

    Directions

    1. 1. Cut onion in half. Slice each half into 1/4" slices.
    2. 2. Cut ends of the squash. Slice squash into 1/4" slices.
    3. 3. Put oil and butter into non stick pan on medium heat.
    4. 4. When oil and butter are bubbling, put onions in the pan and sprinkle with the garlic. Let cook 3-4 minutes just until onions become opaque, stirring occassionally.
    5. 5. Put in the sliced squash. Season with the salt. Cook 10 minutes until the squash is starting to brown, stirring occassionally. Season with pepper Serve hot. You want the squash soft and a little caramelized, but not totally browned.
