  • Easy Quiche

    Ingredients

    • 1 (8 inch) pie crust (buy already made, frzn)
    • 4 to 6 strips bacon (may substitute with Spam or possibly ham cubes)
    • 1/2 c. finely minced green onions
    • 1 c. cubed Swiss cheese (Gruyere or possibly Emmentaler)
    • 1/4 c. grated Parmesan cheese
    • 3 Large eggs - lightly beaten
    • 1 1/2 c. Half & Half
    • 1/4 teaspoon nutmeg
    • 1/2 teaspoon nutmeg
    • 1/2 teaspoon salt (optional)
    • 1/4 teaspoon grnd white pepper

    Directions

    1. Cook bacon till crisp. Pour off fat (save 1/2 Tbsp.). Set bacon aside.
    2. Saute/fry green onions in 1/2 Tbsp. bacon fat till tender.
    3. Crumble bacon and sprinkle over bottom of pie shell.
    4. Sprinkle onions and cheese over bacon.
    5. Combine Large eggs, cream, nutmeg, salt and pepper. Strain over cheese mix.
    6. Bake quiche 15 min at 450 degrees.
    7. Reduce oven temperature to 350 degrees and bake till a knife inserted 1 inch from pastry edge comes out clean (approximately 30 to 40 min).
    8. Yield: 6 to 8 servings.
    9. Suggestion: Serve as a main dish with salad and French bread.
