Easy Pineapple Pie
Ingredients
- 20 ounce Can crushed pineapple
- 3 1/2 ounce Bx instant lemon pud/pie mix
- 1 c. Lowfat milk
- 4 ounce Frzn whipped topping, thaw
- 2 Tbsp. Lemon juice
- 1 tsp Lemon zest
- 1 x 8 or possibly 9-in graham pie crust
Directions
- Drain pineapple well. Combine pudding mix and lowfat milk in medium bowl. Beat 2-3 minutes till very thick. Mix in whipped topping, pineapple, lemon juice and lemon zest. Pour into crust. Cover and chill 4 hrs or possibly overnight. Garnish with pineapple chunks and mint sprigs.
