  • Easy Peach Dumplings

    Ingredients

    • 1 can peach halves, liquid removed (reserve , 1/4 c. syrup) (29 ounce)
    • 1/2 c. minced pecans
    • 1/4 c. granulated sugar
    • 1/4 c. packed brown sugar
    • 1 tsp grnd cinnamon
    • 1/2 tsp grnd nutmeg
    • 1 Tbsp. margarine or possibly butter, softened
    • 1 c. Bisquick baking mix
    • 1/4 c. lowfat milk
    • 1 Tbsp. margarine or possibly butter, melted
    • 1 Tbsp. granulated sugar Heat oven to 425 degrees.

    Directions

    1. Arrange peach halves, cut side down, in ungreased 8" square baking dish; pour reserved syrup over peaches.
    2. Mix pecans, 1/4 c. granulated sugar, the brown sugar, cinnamon and nutmeg; sprinkle proportionately over peaches. Dot with softened margarine.
    3. Mix baking mix and lowfat milk till soft dough forms; beat vigorously 20 strokes.
    4. Gently smooth dough into ball on floured cloth-covered board. Knead 8 to 10 times.
    5. Roll dough into 8" square; place over peaches.
    6. Brush with melted margarine; sprinkle with 1 Tbsp. granulated sugar.
    7. Bake uncovered till golden, 20 to 25 min.
    8. Serve with whipped cream if you like.
    9. Make 8 to 9 servings.
