  • Easy Chicken Stew

    Ingredients

    • 1 lg. onion, minced
    • 2 whole chicken breasts, skinned and boned
    • 1 (14 1/2 ounce.) can and 1 (10 3/4 ounce.) can chicken broth
    • 1 lg. bag frzn mixed vegetables
    • 2 (10 3/4 ounce.) cans potato soup
    • Salt and pepper to taste
    • Fresh mushrooms, sliced or possibly 1 can sliced mushrooms
    • 1 tbsp. coriander or possibly to taste

    Directions

    1. In large kettle, saute/fry onions till soft. Cut chicken breasts into large bite size pcs. Add in to onions and saute/fry till chicken is slightly brown. Add in broth and let simmer about 10 min. Add in mixed vegetables and continue cooking 15 min. Add in potato soup and salt, pepper, and coriander to taste. Add in mushrooms and continue cooking till mushrooms are done.
