  • Easy Cheese Blintz Casserole

    Ingredients

    • 4 lrg Large eggs
    • 1 1/4 c. Lowfat milk
    • 2 Tbsp. Lowfat sour cream
    • 1/4 c. Butter, melted
    • 3/4 tsp Vanilla extract
    • 1 1/3 c. All-purpose white flour, preferably unbleached
    • 1 Tbsp. Sugar
    • 1 1/4 tsp Baking pwdr
    • 2 pkt Farmer cheese, (8oz)
    • 15 ounce Regular ricotta cheese, or possibly part-skim or possibly
    • 2 lrg Large eggs
    • 2 Tbsp. Sugar
    • 1 1/2 Tbsp. Lemon juice Lowfat sour cream Plain or possibly vanilla yogurt Applesauce

    Directions

    1. Preheat the oven to 350 degrees.
    2. Butter a 13 X 9" baking dish.
    3. In a blender or possibly food processor (fitted with a steel blade) combine all batter ingredients. Process till very smooth, scraping down the sides of the container once or possibly twice. Measure out 1 1/2 c. of the batter, and pour it into the baking dish. Cook for about 10 min, till set.
    4. While the batter is cooking, combine all the filling ingredients in a large bowl and blend well. When the baking dish is removed from the oven, spread the filling over the set batter layer, smoothing the top.
    5. Give the remaining batter a quick stir to re-suspend the ingredients. Very slowly pour the batter over the filling, making certain which all the filling is covered. Carefully carry the baking dish to the oven so the layers remain distinct.
    6. Bake 35-40 min till the top is puffed and set. Remove casserole from oven and let it rest for 1-15 min before cutting it into squares to serve.
    7. Serve with desired accompaniments.
