This is a great recipe! I have a similar one that I call Baked Oatmeal To-Go Bars. I like the addition of coconut.

We love baked oatmeal. We make it with all kinds of fruit, usually what ever we have in at the time, But this one my son just loves and he says can I have a "cupcake" for a snack? He sees it as a treat, YAY!
