East Asian angel hair w/ chicken
For people who enjoy spicy/hot! Ingredients
- 1/3 cup peanut oil
- 3/4 cup rice wine vinegar
- 1/3 cup soy sauce
- 2 tbs fresh cilantro, chopped
- 2 tbs green onions, chopped
- 1 jalapena roasted, peeled and chopped (roasting not absolutely necessary, but if you do it, put roasted pepper in a paper bag for 10 minutes - it will facilitate peeling)
- 1 tbs lime juice
- 1 tbs dried red pepper flakes
- 1-1/2 tsp sesame oil
- 1-1/2 tsp red chili oil
- 1 tsp hot pepper sauce (e.g., tobasco)
- 1/2 tsp groupd white pepper
- 1 tsp minced garlic
- 1 half boneless, skinless chicken breast for each serving (can be up to 6), cut into strips
- 1 pound angel hair pasta
- chopped roasted peanuts
- 24 snow peas
- julienned carrots
Directions
- whisk first 13 ingredients in a bowl - thru garlic - for marinade
- pour 1 cup of the marinade into a shallow pan
- reserve remainder
- add chicken to pan, marinate up to 1 hour, turning once
- preheat broiler
- drain chicken adding the marinade to that previously reserved;
- broil chicken until firm
- pour all marinade into pan and bring to boil, whisking as necessary
- cook pasta al dente
- drain pasta and return to pot
- add marinade and toss thoroughly
- divide pasta among bowls
- top with chicken
- garnish with peanuts, snow peas and carrots
