Dutch Pearl Tapioca Pudding
This is also known as "fish eye" tapioca. The "pearls" are large round pieces of tapioca. Ingredients
- 1/3 cup Pearl Tapioca (soak in water overnight)
- 1 quart milk (4 cups)
- 3 egg yolks (or two eggs)
- 1/2 cup sugar
- 1 teaspoon vanilla
Directions
- Combine sugar, egg, and tapioca in a saucepan and add milk. Cook until it starts to boil, stirring.
- Remove from heat and add vanilla. Eat warm or cold.
