  • Duck With Sauerkraut And Apple Stuffing

    Ingredients

    • 1 x Duck (4-5 pounds)
    • 6 ounce Salt pork
    • 1 lrg Onion coarsely minced
    • 3 x tart Green apples
    • 3 Tbsp. Brown sugar
    • 1 x salt & freshly grnd black pepper Thyme
    • 2 tsp Caraway seeds
    • 1 1/2 lb Sauerkraut

    Directions

    1. Dice salt pork and heat in a frying pan till transparent. Add in coarsely minced onion and fry till transparent. Add in apples that have been peeled, cored and diced, and toss with onion and salt pork. When apples and onions are golden brown, add in brown sugar, salt, pepper, thyme and caraway seed. Remove from heat. Drain sauerkraut and toss with apple and onion mix.
    2. Wash duck inside and out. Rub cavity with a little salt and pepper. Stuff with apple-sauerkraut and truss. Prick well with a fork and place duck on rack in a roasting pan. Roast in a slow oven (350 F.) for about 2-1/2 hrs, pricking duck from time to time to allow fat to escape. When the leg joint moves freely, the bird is done.
    3. I like to serve saukerkraut with boiled potatoes.
    4. Serves 4.
