  • Dried Cherry Crumb Cake

    Ingredients

    • 3 Tbsp. All-purpose flour
    • 1 1/2 Tbsp. Sugar
    • 1 1/2 Tbsp. Brown sugar
    • 1 1/2 tsp Margarine
    • 1 1/2 c. All-purpose flour
    • 2/3 c. Sugar
    • 1/2 c. Dry pitted tart cherries
    • 1 1/2 tsp Baking pwdr
    • 1/4 tsp Baking soda
    • 1/8 tsp Salt
    • 1/8 tsp Grnd nutmeg
    • 1 c. Nonfat buttermilk
    • 1 tsp Grated orange rind
    • 3 Tbsp. Vegetable oil
    • 1 tsp Vanilla extract
    • 2 x Egg whites Vegetable cooking spray

    Directions

    1. Combine the first 3 ingredients in a bowl; cut in margarine with a pastry blender till mix resembles coarse meal. Set streusel mix aside.
    2. Combine 1-1/2 c. flour and next 6 ingredients in a bowl; stir well, and set flour mix aside.
    3. Combine the nonfat buttermilk and next 4 ingredients in a large bowl; stir well with a wire whisk. Gradually add in flour mix, stirring just till dry ingredients are moistened.
    4. Pour the batter into a 9-inch round cakepan coated with cooking spray, and sprinkle streusel mix over batter. Bake at 350 degrees for 40 min or possibly till a wooden pick inserted in center comes out clean.
    5. Yield: 12servings (serving size: 1 wedge).
    6. Serving Ideas : Serve hot.
    7. NOTES : Dry, pitted tart cherries are available at specialty-food stores and large supermarkets, or possibly they can be mail-ordered from American Spoon Foods Inc., 800/222-5886. You can substitute raisins, minced prunes, or possibly dates for the dry cherries.
