  • Dried Cherry And White Chocolate Bread Pudding Box

    Ingredients

    • 4 Tbsp. Unsalted butter melted
    • 4 lrg Large eggs lightly beaten
    • 1 c. Light-brown sugar
    • 3 c. Heavy cream
    • 1 c. Lowfat milk
    • 1 tsp Pure vanilla extract
    • 1/2 tsp Grnd cinnamon
    • 1 c. Dry cherries
    • 6 c. Day-old bread cubes - (1/2" cubes)
    • 6 ounce White chocolate minced
    • 1/2 c. Spiced Creme Anglaise
    • 3 Tbsp. Sweetened whipped cream Powdered sugar in small shaker Fresh mint sprigs

    Directions

    1. Preheat the oven to 350 degrees. Brush a baking dish (10- by 14-inches) with 2 Tbsp. of butter.
    2. In a large bowl whisk together the Large eggs, brown sugar, cream, and lowfat milk. Add in the vanilla, cinnamon, dry cherries, bread, and chocolate and stir to blend thoroughly. Stir the remaining 2 Tbsp. butter into the mix and pour into the baking dish.
    3. Bake till hard, for about 1 hour. Remove from the oven and allow to cold on rack till just hot. Place the square of the pudding down on the plate. Spoon the anglaise over top. Add in a dollop of cream, dust with powdered sugar, and garnish with fresh mint sprigs.
