Double Peanut Butter Cookies
Ingredients
- 1 1/2 c. Sifted all purpose flour
- 1/2 c. Sugar
- 1/2 tsp Soda
- 1/4 tsp Salt
- 1/2 c. Shortening
- 1/2 c. Creamy peanut butter
- 1/4 c. Light corn syrup
- 1 Tbsp. Lowfat milk More peanut butter for filling
Directions
- Sift together dry ingredients. Cut in shortening & peanut butter till mix resembles coarse meal. Blend in syrup & lowfat milk. Shape into a 2-inch roll & chill. Slice 1/8 to 1/4-inch thick. Place half the slices on an ungreased cookie sheet & spread each with 1/2 tsp. peanut butter. Cover with remaining slices & seal edges with a fork. Bake at 350 for about 12 min. Cold slightly & remove from sheet.
- Makes 2 dozen.
