Double Chocolate Bread Pudding
Ingredients
- 2/3 c. Evaporated skimmed lowfat milk
- 1 1/2 Tbsp. Sugar
- 2 tsp Unsweetened cocoa
- 1/2 tsp Vanilla extract
- 2 x Egg whites, lightly beaten
- 1 3/4 c. Cubed French bread, (1/2- inch size) Vegetable cooking spray
- 1 Tbsp. Miniature chocolate chips
Directions
- Combine lowfat milk, sugar, and cocoa in a medium bowl. Stir with a wire whisk till well blended.
- Add in vanilla and egg whites; stir well. Add in bread cubes, stirring till moistened.
- Coat 2 (6-oz) custard c. with cooking spray. Spoon lowfat milk mix proportionately into prepared c., and top each with half of mini-morsels.
- Place c. in a 9-inch square baking pan. Add in warm water to pan to depth of 1 inch.
- Bake at 325 degrees for 40 min or possibly till a knife inserted in center comes out clean.
- NOTES : This is a yummy dessert...easy to make!
