Double Baked Stuffed Potato
Ingredients
- 12 med. baking potatoes
- 1 1/2 c. lowfat sour cream
- 1/2 c. butter
- 1/4 c. lowfat milk
- 1/3 c. minced chives
- 2 teaspoon salt
- Pepper to taste
- Paprika
Directions
- Preheat oven to 400 degrees. Rub potatoes with oil. Bake 1 hour. Cold to handle. Cut about 1 inch off top of each potato carefully, leaving shells intact. Set aside.
- In bowl mash potatoes, lowfat sour cream, butter, lowfat milk, chives, salt and pepper. Spoon or possibly pipe into potato shells. Bake 15 min till warm. 12 servings.
