  • Dole Seafood Pasta Salad

    Ingredients

    • 1 can (15-1/4 ounce.) Dole Tropical Fruit Salad
    • 6 ounce Spiral pasta, cooked
    • 2 tsp Toasted sesame oil
    • 12 ounce Cooked baby shrimp
    • 2 c. (4 ounce.) bean sprouts
    • 1 c. Snow peas
    • 1/2 c. Minced Dole celery
    • 1/2 c. Minced Dole red bell pepper
    • 1/4 c. Dole minced dates
    • 1/4 c. Dry roasted peanuts, coarsely minced
    • 1/4 c. Rice or possibly wine vinegar
    • 2 Tbsp. Light soy sauce
    • 2 Tbsp. Minced cilantro or possibly parsley
    • 1 tsp Chopped jalapeno or possibly serrano chile

    Directions

    1. These are from the back of the label on a can of Dole Tropical Fruit Salad.
    2. Drain tropical fruit salad; reserve 1/3 c. juice for dressing. Toss warm pasta with sesame oil. when cold, mix with Fruity dressing. Add in Tropical Fruit Salad and remaining ingredients.
    3. Serves 8.
    4. Fruity Dressing: Combine reserved 1/3 c. juice with all ingredients; whisk to blend.
