    Ingredients

    • 1 can refrigerated biscuits
    • 1 1/2 pounds ground beef
    • 1 cup chopped onion
    • 1 package (8 ounces) light cream cheese
    • 1 can (10 3/4 ounces) condensed cream of mushroom soup

    Biscuits are a girl’s best friend- at least this girl’s, anyway.

    That’s right. Biscuits. The fluffy, buttery, utilitarian kind of biscuits, Witchez. I’m not proud- I LOVE the ones in a can-so sue me.

    Living as we do, I tend to do the bulk of my shopping “European” style…a couple of days at a time. That’s because we are currently using a doll house version of a refrigerator. It keeps us thinking about food. Frequently.

    More than you needed to know, right?

    We’re in the market to barter for a new fridge, we just haven’t found the right one. We had a line on a sub-zero (I know, right?) but sadly, it wouldn’t fit through the kitchen doorway. Sniff, sniff.

    1. A hammer and some other tools (ignore the fact that they all still have the price tags on them)

    2. A lawnmower (actually considered that one for a minute)

    3. A nice dog, mostly trained (really??)

    And my all time favorite…

    4. “The bed from my grandmother’s house. Only one person slept in it and she died last year”…uhm, NO.

    We don’t have much refrigerated INDOOR space (small joke there) so we don’t keep much meat on hand. We save the cold space for milk, yogurts, cheese, and fruits. I’m also trying to save myself some after dinner chore time by keeping dinners simple and one-pot as much as I can; makes for fewer dishes to wash. I do enjoy washing them by hand, believe it or not. JC and the boys pitch in and help and it is just more family time for us. These days you can’t have too much of that- it’s easier than you think to lose touch with each other.

    But then, we are a family who moved from Savannah to a smaller town, only to yearn for an even more secluded existence. No malls. But then there's this-

    And this... That's a trade I'll take gladly.

    It's not really that cold, they just love their hats...

    Did I mention the small fact that we don’t have any hot water yet? Minor issue, but one to be considered in planning your day to day activities, so…back to the biscuits, and a glass of wine, thank you very much.

    I am a carb-aholic. I like my breads. And I’m beginning to think that cream of mushroom soup is suddenly a food group.

    See? Thinking about food again, just that quick!

    The refrigerated biscuits and cream of mushroom soup make preparation a breeze, while the ground beef and cream cheese make it a hearty dish.

    In a large skillet, brown ground beef and onions. Combine cream cheese, soup, and milk. Add salt, ketchup, and ground beef and onions. Transfer mixture to a 2-quart casserole. Bake at 375° for 15 minutes. Place biscuits around edge of casserole; return to oven and bake 15 to 20 minutes longer, or until golden brown.
