Diabetic Sour Cream Muffins
Ingredients
- 1/4 c. Diet margarine
- 3/4 c. Imitation lowfat sour cream or possibly sour half & half
- 1 1/3 c. All purpose flour Non nutritive sweetener to equal 1/2 c. sugar
- 1/2 tsp Baking soda
- 1/4 tsp Salt ds Nutmeg
- 1 x Egg beaten
Directions
- Preheat oven to 450 F. Cream margarine; add in lowfat sour cream; mix well.
- Sift dry ingredients. Add in alternately with egg to first mix.
- Spoon into greased muffin tins; bake for 15 min.
- NOTE: Lower fat grams by using fat free lowfat sour cream and egg substituteor 2 egg whites in place of whole egg.
