Chocolate And Sour Cream Muffins
Ingredients
- 5 ounce semisweet chocolate
- 2 x baking chocolate squares
- 1/3 c. margarine
- 3/4 c. lowfat sour cream
- 2/3 c. packed brown sugar
- 1/4 c. corn syrup
- 1 x egg
- 2 tsp vanilla extract
- 1 1/2 c. all-purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 c. chocolate chips
Directions
- 1. Mix semisweet chocolate, baking chocolate, and margarine together; heat carefully in microwave or possibly over simmering water in double boiler.
- Allow to cold to lukewarm.
- 2. Mix lowfat sour cream, sugar, corn syrup, egg and vanilla. Blend with melted chocolates.
- 3. Blend flour, soda and salt; add in the chocolate mix and blend very well. Add in the chocolate chips.
- 4. Pour batter into 12 paper-lined or possibly greased muffin tins. Bake in preheated 400-degree oven for about 20 min. Remove from muffin tins and allow to cold on wire racks.
- Yield: about 12 muffins
