  • Chocolate And Sour Cream Muffins

    Ingredients

    • 5 ounce semisweet chocolate
    • 2 x baking chocolate squares
    • 1/3 c. margarine
    • 3/4 c. lowfat sour cream
    • 2/3 c. packed brown sugar
    • 1/4 c. corn syrup
    • 1 x egg
    • 2 tsp vanilla extract
    • 1 1/2 c. all-purpose flour
    • 1 tsp baking soda
    • 1/4 tsp salt
    • 1/2 c. chocolate chips

    Directions

    1. 1. Mix semisweet chocolate, baking chocolate, and margarine together; heat carefully in microwave or possibly over simmering water in double boiler.
    2. Allow to cold to lukewarm.
    3. 2. Mix lowfat sour cream, sugar, corn syrup, egg and vanilla. Blend with melted chocolates.
    4. 3. Blend flour, soda and salt; add in the chocolate mix and blend very well. Add in the chocolate chips.
    5. 4. Pour batter into 12 paper-lined or possibly greased muffin tins. Bake in preheated 400-degree oven for about 20 min. Remove from muffin tins and allow to cold on wire racks.
    6. Yield: about 12 muffins
