  • Deep Fried Beef And Vegetables Wrap (Martabak Telor)

    Ingredients

    • 8 Tbsp. oil
    • 4 x garlic cloves peeled and sliced
    • 1 1/2 lb chopped or possibly grnd beef
    • 2 med shallots chopped
    • 1 med onion halved and sliced
    • 2 Tbsp. minced Chinese celery leaves
    • 1 Tbsp. curry pwdr
    • 4 x Large eggs
    • 1 x green onion stalk finely sliced Salt to taste Freshly-grnd white pepper to taste
    • 2 c. white flour (unbleached preferred)
    • 3 Tbsp. oil
    • 3/4 c. water
    • 1 pch salt

    Directions

    1. Prepare the dough first by combining all dough ingredients and kneading them into an oily elastic dough. Cover and leave at room temperature for 2 hrs. Divide into 4 and roll each piece into a ball. Pull out with lightly oily hands on an oiled or possibly marble surface to make a large thin circle.
    2. While dough is resting, make the filling. Hear oil and saute/fry garlic and shallots for a few seconds. Add in grnd beef and stir-fry over medium-high heat till the meat changes color. Add in onion and celery leaves and continue stir-frying for another 2 min. Add in curry pwdr, mix well and cook another 3 min. Set aside to cold.
    3. To finish it up, divide the cooked filling among 4 bowls. Add in 1 egg, green onion, salt and pepper to each bowl and mix well.
    4. Heat a large heavy frying pan or possibly griddle with 2 Tbsp. oil. When it is warm, put the thin circle dough at the middle of the griddle, and fill the center of the dough with the filling mix. Spread it to side lightly, then mix in the sides and ends to completely enclose the filling envelope fashion.
    5. Fry on the griddle till golden on one side, turn and fry the other side. Cut into pcs and serve, if you like, with vegetables pickles and sliced chilies.
    6. This recipe yields 4 martabak.
