    my version of an old recipe

    Ingredients

    • 1 cup dates
    • 1 cup nuts (I like walnuts in this)
    • 1 cup flour (whole wheat works well)
    • 2 tsp. baking powder
    • 1/2 cup sugar
    • 5 eggs, separated
    • 1 T. spices (cinnamon, nutmeg, or pie spice)
    • 1 tsp. vanilla

    Directions

    1. Put dates and nuts into a large bowl, no need to cut
    2. them up.
    3. Add flour, baking powder, sugar, spices vanilla, and egg yolks. If batter is dry, add a few tablespoons of water.
    4. Beat egg whites stiff, and fold into batter.
    5. Pour into a greased and floured loaf pan.
    6. Bake at 350 degrees for an hour or longer, turn off oven and let sit a half hour. Cut into slices when cool. Freezes well.
    7. Notes: To add a little color, try adding a few dried or even fresh cranberries.
