Date Nut Loaf
my version of an old recipe Ingredients
- 1 cup dates
- 1 cup nuts (I like walnuts in this)
- 1 cup flour (whole wheat works well)
- 2 tsp. baking powder
- 1/2 cup sugar
- 5 eggs, separated
- 1 T. spices (cinnamon, nutmeg, or pie spice)
- 1 tsp. vanilla
Directions
- Put dates and nuts into a large bowl, no need to cut
- them up.
- Add flour, baking powder, sugar, spices vanilla, and egg yolks. If batter is dry, add a few tablespoons of water.
- Beat egg whites stiff, and fold into batter.
- Pour into a greased and floured loaf pan.
- Bake at 350 degrees for an hour or longer, turn off oven and let sit a half hour. Cut into slices when cool. Freezes well.
- Notes: To add a little color, try adding a few dried or even fresh cranberries.
