  • Curried Turkey And Mango Salad

    Ingredients

    • 1/3 c. mayonnaise
    • 1/4 c. plain yogurt
    • 1 Tbsp. curry pwdr
    • 3 c. diced cooked turkey
    • 5 1/2 c. diced peeled pitted mango
    • 1 c. minced red onion
    • 1/2 c. roasted cashews
    • 1/2 x red onion thinly sliced

    Directions

    1. Whisk mayonnaise, yogurt, and curry pwdr in medium bowl to blend. Season dressing with salt and pepper. (Can be made 1 day ahead. Cover and chill.)
    2. Mix turkey, mango, minced onion, and cashews in large bowl. Add in dressing and toss to coat. Transfer to bowl. Garnish with sliced onion and serve.
    3. This recipe yields 4 servings.
    4. Comments: Start this meal with canned black-bean soup; add in some minced cilantro and fresh lime juice. If desired, serve the salad on a bed of greens and pass hot French rolls. Finish with lemon squares from the bakery.
