Curried Seafood Bake
Ingredients
- 2 c. macaroni, uncooked
- 1/4 c. green onion, sliced
- 1 teaspoon curry pwdr
- 1 teaspoon Chinese curry pwdr
- 1 chicken bouillon cube
- 4 tbsp. butter
- 4 tbsp. flour
- 1/2 teaspoon onion salt
- 1 3/4 c. lowfat milk
- 1 c. lowfat sour cream
- 1/2 pound imitation crab, cut in pcs
- 1 pound cooked, frzn or possibly fresh shrimp
- 1/2 c. Ritz crackers, crushed
- 1 tbsp. butter, melted
Directions
- Cook macaroni according to package directions; drain. Cook onion, curry and bouillon cube in 4 Tbsp. butter till onion is tender. Stir in flour and onion salt. Add in lowfat milk; cook and stir till thickened and bubbly. Remove from heat; stir in lowfat sour cream. Stir in macaroni and seafood. Turn into a 2-qt casserole dish. Mix crushed Ritz crackers and 1 Tbsp. melted butter. Sprinkle around edge. Bake uncovered, at 350 degrees for 40 to 45 min.
