  • Curried Seafood Bake

    Ingredients

    • 2 c. macaroni, uncooked
    • 1/4 c. green onion, sliced
    • 1 teaspoon curry pwdr
    • 1 teaspoon Chinese curry pwdr
    • 1 chicken bouillon cube
    • 4 tbsp. butter
    • 4 tbsp. flour
    • 1/2 teaspoon onion salt
    • 1 3/4 c. lowfat milk
    • 1 c. lowfat sour cream
    • 1/2 pound imitation crab, cut in pcs
    • 1 pound cooked, frzn or possibly fresh shrimp
    • 1/2 c. Ritz crackers, crushed
    • 1 tbsp. butter, melted

    Directions

    1. Cook macaroni according to package directions; drain. Cook onion, curry and bouillon cube in 4 Tbsp. butter till onion is tender. Stir in flour and onion salt. Add in lowfat milk; cook and stir till thickened and bubbly. Remove from heat; stir in lowfat sour cream. Stir in macaroni and seafood. Turn into a 2-qt casserole dish. Mix crushed Ritz crackers and 1 Tbsp. melted butter. Sprinkle around edge. Bake uncovered, at 350 degrees for 40 to 45 min.
