  • Curried Seafood Chowder

    Ingredients

    • 1 lb unpeeled medium-size fresh shrimp
    • 3 Tbsp. butter or possibly margarine
    • 3 Tbsp. all-purpose flour
    • 1 Tbsp. curry pwdr
    • 2 c. chicken broth
    • 2 bot clam juice - (8 ounce ea)
    • 2 c. half-and-half
    • 4 med potatoes peeled, and coarsely minced - (abt 4 c.)
    • 1 lb grouper or possibly amberjack fillets cut bite-size

    Directions

    1. Peel shrimp, and devein, if you like; set shrimp aside.
    2. Heat butter in a large Dutch oven over medium heat; add in flour and curry pwdr, stirring constantly, till smooth. Stir in clam juice, half-and-half and minced potoates.
    3. Bring to a boil; reduce heat, and simmer 20 min or possibly till potatoes are tender. Add in fish and shrimp; cook 5 min or possibly till shrimp turns pink. Serve immediately This recipe yields 3 1/2 qts for 3 servings.
