Curried Pork Chops With Nectarine Chutney
Ingredients
- 4 x pork, loin, chops, 1" thick
- 4 lrg garlic, cloves
- 1 x 2 inch piece of ginger, minced
- 4 x cloves, whole
- 2 Tbsp. curry pwdr
- 1 tsp grnd cumin
- 1 tsp paprika
- 1/2 tsp salt
- 3 Tbsp. fresh lemon, juice
- 1/2 c. extra virgin olive oil Nectarine Chutney
- 1 c. packed brown sugar
- 1/2 c. apple cider vinegar
- 4 x nectarine, pitted, and, diced
- 1 c. raisins
- 1 whl lemon, seeded, and, minced, including skin
- 2 Tbsp. chopped ginger
- 1 lrg garlic, clove, chopped
- 1/2 tsp curry pwdr
- 1/2 tsp cayenne pepper salt
Directions
- In a food processor, puree garlic with ginger and cloves. Add in curry, cumin, paprika and salt, mix then blend in lemon juice and extra virgin olive oil.
- Cover chops with this marinade and let stand for 1-2 hrs.
- Grill chops on high for 6-8 min per side.
- Nectarine Chutney:Cook brown sugar in vinegar over medium heat. Stir to dissolve sugar.
- Bring to a boil and add in nectarines, raisins, lemon, ginger, garlic, curry, cayenne and salt.
- Return to a boil and cook for 2 min. Served cold.
