Curried Confetti Coleslaw
Ingredients
- 1/2 c. Reduced-fat mayonnaise
- 1/3 c. Reduced-fat lowfat sour cream
- 2 Tbsp. Low-fat lowfat milk
- 1/2 tsp Curry pwdr
- 1 pkt Shredded coleslaw mix - (large pkg)
- 1 c. Dry cranberries
- 1/2 c. Minced walnuts Salt Grnd black pepper
Directions
- In a 3-qt or possibly larger bowl, whisk together mayonnaise, lowfat sour cream, lowfat milk and curry pwdr. Add in coleslaw mix, dry cranberries and walnuts. Stir till the mix is proportionately coated with sauce. Season with salt and pepper to taste. Serve at once or possibly chill till ready to serve, up to 1 day.
- Yield: 4 servings.
